  • 2 large eggs
  • cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup fruit berries, apples, or bananas
  • Optional toppings: nuts chocolate chips, shredded coconut

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Grease an 8×8-inch baking dish.
  • In a large bowl, whisk milk, eggs, maple syrup, butter, vanilla, and salt.
  • Stir in oats, baking powder, cinnamon, and fruit.
  • Pour mixture into prepared baking dish.
