Ingredients
  

  • 2 cups cherry tomatoes halved
  • 1 large cucumber diced
  • ½ red onion thinly sliced
  • ½ cup Kalamata olives pitted
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley chopped

Dressing:

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice or red wine vinegar
  • 1 clove garlic minced
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
 

  • In a large bowl, combine tomatoes, cucumber, red onion, olives, feta, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Pour dressing over salad and toss gently to combine.
