Ingredients
  

  • 1 lb ground sausage – Use spicy mild, or breakfast sausage, depending on your preference.
  • 8 oz cream cheese – Adds richness and creaminess to the dip.
  • 16 oz Velveeta cheese – Melts smoothly for that classic cheesy texture.
  • 1 can 10 oz Rotel diced tomatoes with green chilies – Adds a spicy, tangy kick.
  • 1/2 cup shredded cheddar cheese – Enhances the cheesy goodness.
  • 1 tsp garlic powder – Adds depth of flavor.
  • 1/2 tsp onion powder – Enhances the taste of the sausage and cheese

Instructions
 

Cook the Sausage:

  • In a large skillet over medium heat, cook the sausage until browned, breaking it apart as it cooks. Drain excess grease if needed.

Melt the Cheese:

  • Reduce the heat to low and add the cream cheese and Velveeta cheese to the skillet. Stir until melted and smooth.

Add Rotel & Seasonings:

  • Pour in the Rotel tomatoes (undrained), garlic powder, and onion powder. Stir to combine.

Simmer & Blend:

  • Let the dip cook for a few minutes, stirring occasionally, until all ingredients are fully incorporated.

Add Extra Cheese & Optional Ingredients:

  • Mix in shredded cheddar cheese and any optional additions like jalapeños or black beans.

Serve Warm:

  • Transfer to a serving bowl or slow cooker set to "warm" and enjoy with tortilla chips, crackers, or veggies.
