- 1 can 15 oz cannellini beans, drained and rinsed
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1/2 cup sun-dried tomatoes chopped
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese plus more for serving
- Fresh parsley or basil for garnish
Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add chopped onions, garlic, carrots, and celery. Cook until fragrant and softened.
