- 2 cups cooked chicken shredded (rotisserie chicken works great!)
- 1 cup Greek yogurt plain, full-fat for creaminess
- 1 cucumber diced (seeded for less water)
- 1/2 red onion finely chopped
- 2 cloves garlic minced
- 1 tbsp lemon juice freshly squeezed
- 1 tbsp olive oil
- 2 tbsp fresh dill chopped
- 1 tbsp fresh parsley chopped
- Salt and pepper to taste
