  • 2 cups cooked chicken shredded (rotisserie chicken works great!)
  • 1 cup Greek yogurt plain, full-fat for creaminess
  • 1 cucumber diced (seeded for less water)
  • 1/2 red onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Prepare the Chicken: Shred your cooked chicken into bite-sized pieces. You can use leftover grilled chicken or a store-bought rotisserie for convenience.
  • Chop the Veggies: Dice the cucumber (remove the seeds to prevent excess moisture) and finely chop the red onion.
  • Make the Tzatziki Dressing: In a large bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic, dill, parsley, salt, and pepper. Taste and adjust seasoning as needed.
  • Combine Everything: Add the shredded chicken, cucumber, and red onion to the dressing. Mix until everything is well coated.
  • Chill and Serve: For the best flavor, let the salad chill for 30 minutes before serving. This lets the flavors meld together beautifully.
