Ingredients
  

  • 4 boneless skinless chicken breasts (or thighs)
  • ½ cup basil pesto
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup cherry tomatoes optional
  • ¼ cup grated Parmesan cheese optional

Instructions
 

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

    Prepare the chicken:

    • Pat chicken dry and season with salt and pepper.

    Add pesto:

    • Spread pesto evenly over each piece of chicken.

    Arrange in dish:

    • Place chicken in the baking dish and drizzle with olive oil.
    • Add cherry tomatoes around the chicken if using.

    Bake:

    • Bake for 20–25 minutes, or until the chicken is fully cooked (internal temp 165°F / 74°C).

    Finish and serve:

    • Sprinkle with Parmesan cheese before serving if desired.
    • Serve warm with your favorite sides.

    Notes

    • Extra flavor: Add mozzarella on top and broil for a cheesy finish.
    • Grill option: Grill chicken and brush with pesto during the last few minutes.
    • Homemade pesto: Use fresh basil, garlic, pine nuts, Parmesan, and olive oil.
